VEGETARIAN EGGS

  • Potatoes -4 boiled and peeled
  • Salt acc to taste
  • Black pepper -1/4 tsp
  • Coriander or parsley -1 tsp
  • Butter - 2tsp
  • Curd -115 gms
  • Oil-1/2 tsp
  • Cinnamon stick 1 small
  • Turmeric powder-1/2
  • Semolina-1/4 cup

Recipe

1.Fold one tsp of salt black pepper ,coriander and butter into mashed potatoes.
2.Knead the curd .
3.Heat oil in pan
4.Add cinnamon stick , turmeric powder,curd and reaming salt.mix well and cook for few minutes .
5.Allow to cool
6.Roll into 6 balls
7.Divide mashed potatoes into 6 parts and mould around curd balls so that you have 6 large eggs.
8.Coat each egg with semolina and deep fry for few seconds until golden brown and crisp then drain.

SERVING SUGGESTION

CUT EACH EGG INTO HALF AND SERVE WITH SAUCE .
